Antique bean cutter built around the 1900's

Today there are canned beans, formerly from the garden. Of course, the garden beans were not ready to eat immediately, but had to be harvested, processed and naturally cut. This was done with a bean cutter, which was operated by a crank.

Uh, OK, but there's no way that's food safe. The rust pitting on the blades alone guarentee bacteria will have somewhere to grow and then be in direct contact with anything you put through it. There's just no way to get the inside surfaces reliably clean. I mean, you're doing perfectly good work, but that needs to be either designated decorative only or to have the cutting head unit replaced. Not trying to be a dick, the work's dandy, but, don't want people to get sick needlessly either.

None of these restoration channels use a ratcheting screwdriver. Best tool you can own imo.

Nicely done, sir. Tip: always use a screwdriver that fills the slot in the screw head. Better torque and less likelihood of damaging the screw.

In my early childhood in the 1970s my mother frequently told me to use the thing on green beans. It was sometimes boring, but strangely enough also satisfying to see how the machine sliced the beans.

Nice clean-up, and it looks very smart. We can see the machine slices beans, though eating them before 'topping and tailing', i.e., stalks and all, would be unappetising. It seems like overkill, too as we easily perform this task nowadays by simply pushing our (runner or French) beans through a small handheld bean slicer. Possibly it was for a professional kitchen or, as suggested below, really intended to shred rolled-up tobacco leaves.

Use a chemical rust remover. Letting the pieces soak in Evapo-Rust for a day will do a much better job at removing the rust than your shitty sandblasting.

Hi, nice work, but for me a little reproach, I wouldn't grind or cement the old alloy, I'd leave the original metal structure visible. And in Germany, for example, as well as Czechs, it is more common for kitchen utensils to have a shade similar to ivory, but green isn't bad either.

This machine splits the bean so that when one cooks the beans that the spices get into the beans (if not split it's very bland, even salt doesn't get in unless cooked for days) it also cuts down on cooking time because the boiling water gets into the bean. Next time you open a can of beans have a look and see that every bean is split :-) It's a bean splitter but just like every tool in the garage and the kitchen . . . . If you can use the tool to make your job easier or quicker or improves the quality, without damaging the tool or bringing the user into danger, then this bean cutter can also be a pea splitter, right?

Foxtrot Oscar, no that is how my mum used to serve runner beans when I was a kid. Sliced exactly like that and boiled, I don’t think she had a machine like that (she probably had a cheap version) but I think it’s just a traditional way to serve them and slicing them by hand would take forever.
